Respecting the planet
La Mère Brazier is committed to various environmental initiatives that testify to its passion for local produce. These include a purchasing policy that favours short supply chains and seasonal produce bought locally from farmers, winegrowers and artisans, all of whom are mindful of their farming and breeding methods.
A range of concrete actions in favour of the land and those who work it, coupled with other initiatives such as limiting excess packaging and thinking carefully about the use of plastic.

The cuisine as it is practised also reflects the commitment of Mathieu Viannay and those around him to use the finest ingredients, all prepared with simplicity and sincerity.
A vegetable elevated to new heights by just the right amount of cooking, a fruit magnified by different interpretations, the iconic artichoke heart divinely paired with foie gras… The talent of our chefs is expressed in how they honour the produce and in their clear intention to pass on their culinary savoir-faire.

This is a place where diners come to be surprised by wonderful culinary and wine discoveries and comforted by familiar flavours they have been hankering after – it is no coincidence that the little ‘Proustian madeleine’ is one of Mathieu Viannay’s most beloved desserts, as he understands so well the emotional value we attach to what we eat.
